These Peanut Butter Cup cookies are some of my favorite cookies.  Full of peanut-buttery goodness.  Easy to make. A crowd pleaser.  If I take them somewhere, I will never bring any of home.  I get blessed and cursed in turn for making them.  Blessed because they are amazing.  Cursed because no one can eat just one… or two… or three.

These irresistible cookies are baked to perfection in a mini muffin pan. The marriage of peanut butter and chocolate has never been sweeter, and these bite-sized delights are bound to become a family favorite. Whether you’re satisfying your sweet tooth or sharing with friends, these cookies are sure to bring smiles all around. So, don your apron, preheat that oven, and get ready to create a batch of these mouthwatering treats!

What you will need to make these Peanut Butter Cup Cookies

  • sugars (both brown and granulated)
  • eggs
  • vanilla
  • flour
  • soda

Description

An irresistible Peanut Butter Cup Cookies baked to perfection in a mini muffin pan. These bite-sized delights are bound to become a family favorite.

Ingredients

Scale
  • 1 cup butter (2 sticks) room temperature
  • 2/3 cup peanut butter (crunchy or creamy – I like crunchy)
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2  2/3 cup flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 48 miniature Reese’s peanut butter cups, unwrapped

Instructions

  1. Cream butter, peanut butter, sugar, brown sugar, eggs and vanilla together until smooth. Combine flour, soda and salt and add to butter mixture.
  2. Form dough into 1-inch balls and place in mini muffin pan (leave in balls; do not press down.)
  3. Bake at 350 degrees for 10-12 minutes.  Just cook until they start to brown, and then take them out.   Immediately press a miniature peanut butter cup into the cookie until top is even with the top of the cookie.  Let cookies cool in pan for at least 10 minutes before transferring.

That is what I was going to suggest, too, Catherine! I’ll bet it would be great. Or you could use a chocolate cookie dough base like this recipe (which is stuffed with a roll) https://www.thesisterscafe.com/2009/02/caramel-filled-chocolate-cookies. Lisa, let us know how it turns out!

You could use a standard chocolate chip cookie dough, minus the chocolate chips. You may have to add a little extra flour to make it firm enough to roll into balls, or chill it.

My kids are severely allergic to peanuts. I know I could substitute the reeces for a rolo or a hershey kiss, but what would I sub the peanut butter for to make them edible for my children?

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
