Ingredients

Scale
  • 2 pounds of ground beef (or 1/2 ground pork)
  • 1 large onion, chopped
  • ½ green bell pepper, diced
  • 2 cloves garlic minced
  • 2 stalks celery, sliced
  • 1 (46 oz) can tomato juice
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans red kidney beans or chili or pinto beans (or a mix)
  • 2 Tbsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp Italian seasoning
  • ½ tsp pepper
  • Garnish:
  • shredded cheddar cheese
  • frito corn chips

Instructions

  1. Saute onions and beef/pork, drain well.
  2. Combine all ingredients in slow cooker.
  3. Cook for 3 hours on high or 6 hours on low.
  4. Serve with shredded cheddar cheese and frito corn chips.
  5. Enjoy!

Notes

 *if you don’t want to use your slow cooker. Simply follow instructions but put in large pot on the stove and simmer covered for 1 hour or so until all the flavor meld and veggies are soft. Stir occasionally and serve!
