Applesauce Snickerdoodle Muffins

Ingredients

Scale
  • ½ cup butter
  • ½ cup sugar
  • 2 eggs
  • ¾ cups Applesauce
  • 1 ¾ cups flour
  • 1 tbsp baking powder
  • ½ tsp Salt

Topping:

  • ¼ cup butter, melted
  • ½ cup sugar
  • 1 tsp cinnamon

Instructions

  1. Place butter and sugar in the bowl of your mixer and cream together on medium low.
  2. Add in the eggs one at a time and beat until the mixture is light and fluffy.
  3. Sitr in the applesauce.
  4. Add the dry ingredients (sift together in a separate bowl, if desired–to save time I normally do not do this. I just add the flour and then sprinkle in the rest of the dry ingredients across the top before I mix it all up)
  5. Spoon the batter into greased or paper lined muffin tins.
  6. Bake at 350 for 12-18 minutes (less if using mini muffin pan) until golden brown.
  7. While the muffins are still warm dip them in melted butter and then in cinnamon sugar.
