Description

A ridiculously chocolatey cake topped with LOTS of dreamy chocolate buttercream is the stuff dreams are made of!


Ingredients

Scale
  • 1 cups sugar
  • 1 cup flour
  • 1/2 cup unsweetened cocoa (I used Dutch cocoa –which is darker)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 eggs
  • 1/2 cup buttermilk {I’ve used 1% with good results too}
  • 6 Tablespoons melted butter {Butter is better but canola oil is fine}
  • 1 tsp vanilla
  • 1/2 cup boiling water

Classic Buttercream Frosting

  • 1/2 cup of butter, softened
  • 1/3 cup of cream or milk (maybe a little more to achieve your desired consistency )
  • 1/2 cup of unsweetened cocoa
  • pinch of salt
  • 2 cups of powdered sugar
  • 1 tsp vanilla

Instructions

Cake:

  1. Preheat oven to 350
  2. Butter or spray with cooking spray one cake pan ( 8×8 square or 8-9 inch round) I like to cut a piece of parchment out for the bottom and then butter it and the sides.
  3. Combine sugar through salt in a large mixing bowl.
  4. Make a well and add remaining ingredients, except the boiling water.
  5. Mix on medium speed for about 2 minutes.
  6. Then stir in one cup boiling water.
  7. Batter will be smooth and very runny.
  8. Pour into prepared pan.
  9. Cook for 20-30 minutes, depending on your oven–watch it starting at 20 minutes–when toothpick comes out clean–it is done. Do not overcook!
  10. Set cake on a wire rack and allow to cool for 5 minutes and then flip out onto a rack or serving plate to cool completely before frosting.

Chocoalte Butter Cream Frosting:

  1. Place butter in a mixing bowl and beat.
  2. Add pinch of salt, cocoa, powdered sugar and vanilla.
  3. Beating together on high for 3-4 minutes until fluffy…may need to add more cream or milk to reach desired consistency, I like mine fluffy.
