Ingredients

Scale
  • 8 cups russet potatoes, diced
  • 1 yellow onion, diced
  • 2 large carrots, peeled and chopped
  • 1/2 cup celery, chopped
  • 16 ounces Ham, cubed
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground pepper
  • 1/4 cup flour (substitute gluten free flour if needed)
  • 4 cups chicken broth
  • 1 1/2 cups heavy cream (you can use half and half or milk)
  • 1/2 cup sour cream

Instructions

  1. Place everything, except flour, cream, and sour cream into the slow cooker.
  2. Cook on low for 7-8 hours or high for 4-5 hours.
  3. Using a potato masher, mash about 1/3 of the potatoes (you don’t need to worry about the ham—it won’t really mash that much)
  4. Add the flour, cream (or milk) and sour cream and stir everything together.
  5. Cover and cook on high for an additional 15 minutes.
  6. Serve with a sprinkling of chives or grated cheese if desired.
