Smokey Chipotle Sandwich Spread

Chipotle Sandwich Spread

One of my favorite meals is a good sandwich and the one with this Chipotle Spread has been on repeat for lunch in my house for days!  We are never seem to get sick of it and I am looking forward to having one today!  First, I like to hollow out my roll (cuts down on the bread/ calories and allows it to fit into my mouth a little better-haha) , I then toast it for a few minutes before layering  some Chipotle spread with honey mustard and then stacking it with all of the ‘good stuff’, including lots of bright and colorful veggies! I am telling you–this sandwich is THE BEST!!  And I think the Chipotle Spread is really the secret ingredient that takes your sandwich over the top!

If you have never purchased Chipotle Peppers in Adobo Sauce, then come in a can and you will find them in your normal grocery store close to the canned green chilis.  I always double this recipe and then freeze the rest of the can in a Tupperware for next time. Also, I really like this with light sour cream, but it works great with mayonnaise and greek yogurt. What every you like best or have on hand! It is also great on paninis and quesadillas!  YUM!

Some of my favorites or the ‘good stuff’ for the perfect sandwich is:

  • Good quality deli meat (I like thin cut Boar’s Head brand)
  • Cheese–cheddar, provolone, gouda etc –we like all varieties of cheese
  • Purple Onion -thinly sliced
  • Carrots–shaved
  • Bell Peppers–thinly sliced
  • Avocado slices–with salt and pepper
  • Tomato slices
  • Cucumber –thinly sliced
  • Lettuce and Sprouts
  • Honey mustard
  • Chipotle Sandwich Spread!! (the secret ingredient)

Ingredients

Scale
  • 2–3 canned chipotle peppers * (depending on how hot and spicy you like it)
  • 1 Tablespoon adobo sauce *( the sauce in the can)
  • 1/2 cup Sour cream, greek yogurt or Mayonnaise

Find cans of’ Chipotle Peppers in Adobo Sauce’ in your local grocery store new canned green chilis. I always double this recipe and then freeze the rest for next time.


Instructions

  1. Chop peppers very finely.
  2. Add chopped peppers, adobo sauce and sour cream (or yogurt or mayo) to a bowl and stir to combine well.
  3. Spread on sandwiches and enjoy!!

Alternate Method:

  1. Place peppers, adobo sauce and sour cream (or yogurt or mayo) in a food processor and blend until well combined.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience!
