Arugula Salad with a simple Lemon Dressing

This Arugula Salad with a simple Lemon Dressing is my current favorite and on repeat in my kitchen!  I crave this combination of spicy arugula, bright lemon, salty sunflower seeds, sweet apples and zesty Feta cheese.  The flavors and textures come together to create the PERFECT spring salad.  I know this will be happening a lot for a quick lunch or dinner with some grilled salmon or chicken during the upcoming warm summer months.  I love the sweet and crunchy thin slices of apple, and the addition of berries (pictured below) is wonderful too!  This salad is of course endlessly adaptable to your tastes and what you have to work with on hand.  Try switching the Feta for shaved parmesan, or the sunflower seeds for toasted sugared pecans…the variations are endless.  What ever nuts, cheese or fruit you have on hand, and you are in the mood for will work beautifully!  I love the simplicity of the dressing too!  Simply squeeze a fresh lemon over the top, drizzle some extra virgin Olive Oil and  add a little sprinkle of salt and pepper.  No need to mix a vinaigrette in a separate container (although you could if you want to–I DO love this Lemon Vinaigrette).

What are craving lately?  When the weather gets warmer, I always want to eat light and fresh.  We just opened our pool for the year and we are ready to spend lots of time outside.  I am going to post our favorite grilled vegetable recipe soon!  YUM!

Ingredients

Scale
  • 2 handfuls fresh baby arugula
  • 2 Tablespoons of feta cheese or freshly-grated Parmesan
  • 1/3 of an Apple, thinly sliced
  • 2 Tablespoons roasted and salted sunflower seeds (or pecans or pin nuts )
  • 2 teaspoons good-quality olive oil (approximately )
  • 2 teaspoons freshly-squeezed lemon juice (approximately )
  • Salt and Pepper (sprinkle to taste )

Instructions

  1. Add arugula to a serving bowl (shallow is better).
  2. Sprinkle on toppings that you desire (fruit, cheese, nuts)
  3. Drizzle evenly with olive oil and lemon juice, and sprinkle with salt and freshly ground pepper.
  4. Toss until combined. Enjoy!
  5. Serve immediately.

Notes:

  1. *I never actually measure the ingredients for this recipe, but the proportions above are a good start. Feel free to just taste it and make adjustments if needed–add more extra virgin olive oil, salt and pepper or lemon juice according to your tastes
