Mom's potato Salad

I made this delicious potato salad last week and decided I needed to bring this old post out of the archives and freshen it up with new pictures!  This is my Mom’s fabulous potato salad – a wonderful classic recipe that is perfect for all those family barbecues and backyard parties with friends.  In my family we like to add a few dill pickles chopped up too!  This potato salad is wonderful and a great side dish to burgers, bratwursts, chicken or anything you are grilling this summer.

It is easy to make, especially if you have some Instant Pot Perfect Hard Boiled Eggs on hand!  Have you tried that technique yet?  It makes the perfect hard boiled eggs in minutes!

Ingredients

Scale
  • 2 lbs potatoes (about 6 medium)
  • 1 1/4 cups mayonnaise
  • 1 Tb white vinegar
  • 1 Tb regular prepared mustard
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup chopped celery (about 2 medium stalks)
  • 1/2 cup finely chopped onion
  • 6 hard boiled eggs, chopped

Instructions

  1. Boil potatoes, with skins on, until barely fork tender.  (You don’t want to overcook the potatoes or they will tend to mush and fall apart when you try to cut them in chunks.)
  2. Remove from hot water and allow to cool.
  3. Once cooled, peel and cut into 1-2 inch chunks.
  4. Stir together mayonnaise, vinegar, mustard, salt and pepper.
  5. In a large bowl combine potatoes, celery, onion, and chopped eggs.
  6. Pour mayonnaise mixture over the top and gently stir together until the potatoes are well coated.  Place in refrigerator until time to serve.
  7. *If you add a few dill pickles chopped, decrease salt to 1/2 tsp.

    I love this kind of potato salad. Mine is almost identical with the addition of a chopped apple to add a little sweetness. Now, I want potato salad. Glad you dug out this classic recipe to share again.

    This is the same way my own mom made her potato salad. She would add a couple of small sweet pickles and a couple of radishes, chopped up into tiny pieces, just to add some red and green “confetti”. She sometimes used sweet pickle juice instead of the vinegar, too. YUMM!!

    There is nothing I love better than potato salad. I am just drooling over that picture so I think I should go in my kitchen, drag out some potatoes and start peeling.

Tribute to my sweet Mom
