Easy Bruschetta Chicken Bake with Balsamic Glaze

Do you have an abundance of garden tomatoes to use?  My tomato plants died an early death while I was on vacation in July (I think from a lack of water–boo hoo!), but thankfully the stores and farmer’s stands around me have lots of wonderful tomatoes for sale at great prices!  It is that time of year when tomatoes are plentiful and bursting with flavor!  If you some tomatoes laying around your kitchen right now, then you need to make this Easy Bruschetta Chicken Bake with Balsamic Glaze soon!  Trust me, even if you don’t have garden tomatoes, go and get some, you won’t be disappointed with this recipe!  This Easy Bruschetta Chicken Bake with Balsamic Glaze dish is packed with fresh, flavorful ingredients for a wholesome dinner, and it takes as little as 15 minutes to prep and put in the oven!  If you are a fan of Bruschetta as an appetizer, you are going to love it with chicken as a full meal! It is incredibly easy to make and seriously SO good!  Bursting with flavor, this delicious chicken dish will have your family begging for more!

I picked up some balsamic glaze at the store (by the vinegars and salad dressings) but you could easily make some.  I will add the quick recipe to make it.  You will find lots of uses for the balsamic glaze—mmmm sooo good!  I like it on grilled vegetables, fresh tomato slices with mozzarella cheese, even on salads.  Yum!

Bruschetta Chicken with Balsamic Glaze

Ingredients

Scale
  • 3–4 chicken breasts, about 2 lbs, cut in half or thirds
  • 3 cups chopped tomatoes
  • 1/4 cup fresh chopped basil (are 1–2 TB dried basil)
  • 2 cloves fresh minced garlic
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 oz shredded mozzarella cheese (about 1 cup)
  • 2 oz freshly grated parmesan cheese (about 1/2 cup)

For garnish (optional)

  • Fresh chopped basil
  • Balsamic Glaze

Balsamic Glaze (you can use store bought or make this simple recipe:

  • 1/2 cup balsamic vinegar
  • 2 teaspoons brown sugar

Instructions

  1. Preheat the oven to 375˚F
  2. Chop the roma tomatoes into small 1/4 inch pieces. Chop basil and garlic. In a large bowl, toss the tomatoes, basil, and garlic with the vinegar and half of the salt and pepper.
  3. Lay the chicken breasts flat in the bottom of a large baking dish and season with the remaining salt and pepper. Pour the tomato mixture over the top of the chicken and then use a spatula to spread it evenly over the chicken. Top with the mozzarella cheese.
  4. Bake on the middle oven rack for 35-45 minutes or until the chicken reaches an internal temperature of 165˚F.
  5. Top with fresh chopped basil and balsamic glaze to garnish. Serve hot and Enjoy!

For The Balsamic Glaze:(If making from scratch, prepare while chicken is cooking.)

  1. Combine sugar and vinegar in a small saucepan over high heat and bring to the boil.
  2. Reduce heat to low; allow to simmer for 5-8 minutes or until mixture has thickened and reduced to a glaze.
