Hello friends!  Are you enjoying your summer?  I hope so!  I have not been posting very much because I am soaking up this time with my boys and getting ready for an open house I am hosting for my sons recent wedding.  I am thinking of serving this Cheesy Artichoke Dip with a Kick.  It is my knock off of a delicious dip that I picked up at Costco while I was in Utah that I can’t find here in Tennessee.  It was an Artichoke, Jalepeno and Parmesan dip and my whole family LOVED it!  So I set out to make my own at home.  This dip can be enjoyed cold or warm it up with a little extra cheese sprinkled on top (if you want)…either way is delicious!

I have found that this a great way to eat more veggies.  Everything tastes better with a cheesy dip, right?!

Description

Cheesy Artichoke Dip with a Kick is a wonderful cheesy dip that is packed with flavor. You can enjoy it cold or hot! Everyone will love it!


Ingredients

Scale
  • 2 cans packed artichoke hears (not in oil), drained and chopped (cut away tough parts)
  • 1 8 oz cream cheese, softened
  • 1/2 c mayonnaise
  • 1/2–1 cup sour cream
  • 1 cup parmesan cheese (freshly grated not from the canister)
  • 1 cup grated Monterey Jack cheese
  • 1 small can drained diced green chilis or 1/4 cup diced bottled jalepenos
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon ground pepper

Instructions

  1. Stir together the softened cream cheese, mayo, sour cream, parmesan and Monterey Jack cheese. Once combined stir in the seasonings, artichoke hearts and green chilis or jalepenos.
  2. Sprinkle with fresh chopped parsley and serve

OR

  1. Bake in a 9×9 dish for 35 minutes in a preheated 325 degree oven.
  2. Enjoy with crackers, pita chips, triscuits or tortilla chips

I haven’t been spending very much time on the website the last few months–but I will look into that and see if I can make some improvements.     Mel-I absolutely love your website and recipes. Its been my go-to recipe blog for 9+ years now! You never let me down. For the past year or so though, the adds and pop-ups have gotten so bad that its hard to utilize the website and search and use recipes. Is there any way to improve the pop-up ads?
