I shared this recipe originally  11 years ago when this blog was brand new! I can’t believe it was so long ago!  Time flies when you are having fun, and this little blog has been so fun to do (and thank you for your support and love over the years)! This is a fabulous chicken marinade that my whole family LOVES!  So, I thought it was time to bring it out of the archives and freshen it up with a new picture.   I usually marinade and grill extra chicken so I can freeze it for a quick dinner later. The leftover chicken tastes great sliced in a salad, panini, quesadilla or with pasta.
I do not always have 7-up on hand, but have found other carbonated sodas work well too.  Try Sprite, Ginger-ale, Mountain Dew, or even Coke/Dr Pepper work well too.  I have never tried root beer, but I bet it would work. The only ones I would steer clear of is Orange, strawberry or grape (no bueno)!

Ingredients

Scale
  • 1 can 7up (or Sprite, Mountain Dew, Ginger Ale)
  • 1/2 cup soy sauce
  • 1/4 cup avocado or olive oil (any vegetable oil)
  • 1 Tb horseradish sauce
  • 1 tsp minced garlic
  • 6 boneless skinless chicken breasts

Instructions

  1. Blend all ingredients together and add chicken. ( I usually do this in a big zip loc bag) Let marinate over night or at least 6 hours, in your fridge.
  2. Preheat grill to medium heat, Brush grill with oil to prevent the chicken from sticking.
  3. Place chicken on the grill. Collk for approximately for 5-7 minutes per side, depending on thickness of chicken. The internal temperature should reach 165 for chicken.
  4. Remove chicken from grill and allow to rest 5-10 minutes before serving.

You can also marinate chicken then slice it into strips. Fry with onions and sweet peppers for fajitas.

    I am totally going to try this this week. I have some sprite in my fridge that I’ve been trying to get rid of. This sounds awesome and so easy!

    I OFTEN COME TO YOUR BLOG FOR YUMMY IDEAS, AND I HAVE FOUND SO MANY GREAT AND EASY RECIPES. I HAVE YOUR LINK ON MY BLOG AS WELL. THIS CHICKEN ONE IS GREAT, WE HAVE SWITCHED IT UP A LITTLE BY USING MT. DEW AND TERIYAKI SOY SAUCE. WE ALSO STAB THE KITCHEN WITH A KNIFE A FEW TIMES AND IT MAKES FOR SOME DELICIOUS AND MOIST CHICKEN. THANKS FOR ALL THE IDEAS.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side.
