Creamy Parmesan Rice

Description

The perfect side dish that tastes like something you would order at a fancy restaurant but is actually quite simple to make. 


Ingredients

Scale
  • 4 TB butter
  • 1/2 cup sweet onion, chopped
  • 3 cloves of garlic, minced
  • 1 1/2 cups rice
  • 2 cups chicken stock
  • 1 cup milk
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup grated parmesan cheese
  • 1 TB lemon juice
  • fresh parsley for garnish, if desired

Instructions

  1. in a medium sized pot, melt butter over medium high heat.
  2. add onion and sauté until softened.
  3. Next, stir in garlic and rice and let it cook for a few minutes while stirring the pot.
  4. Add chicken stock and milk, bring to a simmer and cover. Reduce heat to low and cook for 20 minutes or until the rice is tender.
  5. Turn off the heat and stir in parmesan cheese and lemon juice, until it is melted and creamy. Garnish with fresh parsley, if desired. ENJOY!
