Description

 This dip is bursting with all the flavors of summer and packed with lots of nutrients. 


Ingredients

Scale
  • 1 cup corn use thawed, frozen corn or corn on the cob, cooked or raw
  • 1 cup cherry tomatoes, halved
  • ¼ cup red onion, diced small
  • 2 tbsp fresh lime juice
  • ½ bell pepper, red, yellow, or orange, diced small
  • 1 small avocado, diced
  • 1 ½ cup cucumber, diced
  • 1 cup loosely packed cilantro, chopped
  • ½ tsp kosher salt
  • pinch of pepper

Instructions

  1. Combine everything in a large bowl.
  2. Use as salsa for chips, tacos, add to rice bowls, or on top of grilled meat.
  3. ENJOY!
