Gourmet S’more Cookies

These Gourmet S’more Cookies just scream summer to me! Who doesn’t love an ooey gooey S’more this time of year?! Unfortunately, for us living in the South, the hot humid summers are not a good time to gather around a warm camp fire. We have to be creative and find other ways to enjoy the crisp graham crackers, gooey marshmallows and melty chocolate that make up the favorite summer campfire treat!

We recently made these Gourmet S’more Cookies for my family and they were a HUGE hit! the definitely hit the spot and filled the summer s’more craving! My husband said they were the BEST cookies he has ever had! I used my favorite, tried and true Chocolate Chip Cookie dough as the base, added marshmallows and placed them on a graham cracker dipped in butter. Ohhh my goodness, the results were incredible! I really cannot recommend them enough!

Ingredients needed:

*Graham Crackers -plain or cinnamon sugar ones!
*Butter – I use salted
*Chocolate Chip Cookie Dough-this recipe is the BEST in my opinion!
*Marshmellows
*Hershey Bar squares to place on top–not totally necessary, but very cute!

Tips for Success

Ok the base of the cookie is really what makes it special. As the saying goes, “everything is better with butter” and with these cookies that is absolutely TRUE! The butter dipped graham cracker gives the cookie the perfect base. It stays crispy and holds up beautifully under the gooey melty chocolate chip dough. The graham cracker doesn’t just get lost crumbled up in the dough, but does it’s job of holding it all together like the classic s’more.

Ready to pop into the oven

I like to add the Hershey chocolate bar square and little bit of marshmallow on top to give them that iconic S’more look! Be sure not to overcook them! 8-10 minutes in the oven should be plenty! That way they will stay gooey and delicious, just like our favorite campfire treat should be!

Description

A delicious chocolate chip  and marshmallow dough, baked on top of a buttered graham cracker makes the perfect ooey gooey s’more cookie!


Ingredients

Scale

1 1/4 cups butter (2 1/2 cubes)

1 1/4 cup brown sugar

1 cup granulated sugar

2 eggs

2 tsp vanilla

3 2/3 cups flour

2 TB cornstarch

1 1/4 tsp baking soda

1 1/2 tsp baking powder

1 1/2 tsp salt

1– 1 1/2 cup frozen chocolate chips (I like to mix semi sweet and milk)

2 cups mini marshmellows

10–12 full sheets of Graham Crackers (depending on how big you make your cookie dough balls)

1/2 cup butter, melted


Instructions

With your mixer on low, cream butter and sugars together.

Beat in the eggs and vanilla.

Add all your dry ingredients and slowly stir to combine.

Slowly add in marshmallows, and frozen chocolate chips to instantly chill the dough.

Break graham crackers in half, dip in melted butter and place on cookie sheet.

Using a 1.5 ” scoop (or about the size of a golf ball for large cookies) place dough on top of prepared graham crackers. Garnish top with a mini marshmallow and Hershey square, if desired.

Bake in a preheated oven at 375 for 8-10 minutes until slightly golden brown around the edges.

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side.
