Hello Friends,

How is your New Year going so far? Have you had any cray weather where you live? Here in the South we have not gotten any snow but we have had a couple of days off school for wind and ice. My boys have loved it but are still hoping for some of the white stuff this year! What about you? Do you love snow or hate it?

Menu Plan #11

January 15-21, 2024

Monday:

The Best Slow Cooker French Dip Sandwich is the perfect meal for a cold winter day! Stick it in your crock pot in the morning and have a wonderful dinner for your family at the end of the day. We love this with crisp veggies on the side like sliced cucumber and carrots with some homemade buttermilk ranch dressing!

Tuesday:

Creamy Fiesta Chicken Bake

Creamy Fiesta Chicken Bake is a one pan wonder! An easy recipe that really hits the spot! My family loves this one. I like to serve it with some fresh fruit like berries, sliced oranges or apples.

Wednesday:

Shrimp Bowl with Spicy Mayo Drizzle is a meal that just feels good to eat! It is a bright, fresh, healthy and flavorful bowl of goodness. Don’t forget to make a batch of super easy pickled onions, they add so much flavor!

Thursday:

Instant Pot Broccoli Soup

Instant Pot Broccoli Cheese Soup tastes just like the one at Panera Bread that everyone loves. YUM!! Pure comfort food. Serve it with some kind of bread –maybe Grandma’s French Bread or these Easy Baguettes (super popular recipe on the blog).

Friday:

Pizza night–this week I am going to make my family these fun Quick and Easy Pizzas or have my husband pick up pizza from Marcos (he loves their pizza).

Saturday:

Date Night–out! Leftovers for whoever is home.

Sunday:

Crockpot Pork Chops with Creamy Herb Sauce

Crockpot Pork Chops with Creamy Herb Sauce is comforting dish perfect for a Sunday family dinner. Serve with some baked potatoes or mashed potatoes and some steamed broccoli or green beans.

Breakfast Ideas:

Chili Relleno Egg Bake is a fabulous breakfast or dinner. Leftovers are great for lunch too! We love this with some Pico De Gallo!

Snack & Dessert for the week:

Italian Parmesan Pretzel Knots

Italian Parmesan Pretzel Knots are such a fun roll to serve as a snack, with soup, salad or to make a sandwich out of.

NYC Levain Bakery Chocolate Peanut Butter Cookie

Levain Bakery’s Peanut Butter Chocolate Cookies just like the famous cookies in NYC. These are to die for!

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
