Shrimp Bowl with Spicy Mayo Drizzle

This shrimp bowl with spicy mayo drizzle is my new favorite lunch or quick dinner. It is healthy, packed with flavor and easy to pull together fast. It is especially easy when I have most of the ingredients on hand. I like to keep shrimp in the freezer and boxes of Trader Joe’s frozen rice. And Pickled onions have become a staple in my house! Have you tried them? I have linked the super easy recipe here. We always have a glass jar of them in the fridge at all times! They are fabulous in bowls like this, included in sandwiches, Crunchwraps, and sprinkled on tacos! Trust me–they are great on these shrimp bowls, and they really do make almost every meal better!

What you need for the shrimp bowl with spicy mayo drizzle bowl:

*Shrimp
*Rice (I like to use frozen brown or jasmine rice from Trader Joes)
*Arugula (you can leave off the greens if you want–but I like them)
*Shredded Carrots
*Diced cucumbers
*Pickled onions
*fresh cilantro/ parsley (optional–great if you have them)
*Mayonaise (I use light or avocado mayo)
*honey
*sriracha
*lemon juice
*salt

This meal is so quick and easy but tastes divine! A great way to get in your veggies too! I think the best part is the spicy mayo drizzle! YUMMMMM! The perfect meal for a hot summer day! Enjoy!

Ingredients

Scale
  • 7 frozen shrimp 
  • 1/2 cup rice ( I like jasmine or brown rice)
  • 1/2 cup arugula (optional –or just rice if you prefer)
  • 1/4 cup pickled onions ( see recipe here)
  • 1/4 cup shredded carrots
  • 1/4 cup cucumber
  • 1 tbsp fresh cilantro
  • 1 tbsp fresh parsley 
  • 1 tbsp olive oil 
  • 1/2 tsp sea salt, pepper

Spicy Mayo:

  • 1/4 cup mayo 
  • 1 1/2 tbsp sriracha
  • 1/2 lemon, juiced
  • 1 tsp honey 
  • 1/4 tsp sea salt

Instructions

  1. Saute your shrimp by adding olive oil to a pan to heat up. Add shrimp and top with salt and pepper. Cook until shrimp are fully cooked through. 
  2. If using rice, prepare rice according to package directions *I like to use frozen brown or jasmine rice from Trader Joes–just heat the bag in the microwave!
  3. Make your spicy mayo by combining mayo, sriracha, honey, lemon and sea salt in a small bowl. Mix together to combine. Set aside. 
  4. In a bowl, add rice, arugula (if using), carrots, cucumber, pickled onions and sauteed shrimp. 
  5. Top with fresh herbs like cilantro and parsley. 
  6. Drizzle with spicy mayo sauce. 
  7. Enjoy!
