For the Chicken:

4 boneless, skinless chicken breasts

1 cup grated Parmesan cheese

1 cup breadcrumbs

2 eggs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon Italian seasoning

For the Lemon Orzo:

1 cup orzo pasta

2 cups vegetable broth

2 tablespoons fresh parsley, chopped

1 tablespoon lemon juice

Zest of 1 lemon
Instructions
- Prepare the Chicken
Start by setting up a dredging station. In one shallow bowl, beat the eggs. In another bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper. Dip each chicken breast into the egg, then press it into the Parmesan breadcrumb mixture, coating both sides well.

Cook the Chicken
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for about 5–6 minutes per side, or until golden brown and cooked through. Transfer to a plate and tent loosely with foil to keep warm. -
Make the Lemon Orzo
In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package directions, until tender and most of the liquid is absorbed.Remove from heat and stir in the lemon juice, lemon zest, and fresh parsley. Taste and adjust seasoning with salt and pepper if needed.
