Creamy Sausage Rotel Dip

Happy New Years Eve friends! I cannot believe that 2023 has come to an end. It has been a great year full of lots of delicious recipes here at Mel and Boys Kitchen. Thank you for reading my blog, sharing my recipes and taking the time to reach out! I have one last recipe to share with you this year and it will be perfect for your New Year celebrations. This Creamy Sausage Rotel Dip is made with only 3 ingredients. It could not be easier to make but tastes incredible. This dip is perfect for a party because you can make it ahead of time and keep it warm in a crockpot. I have a small black crockpot that I sometimes serve it out of. Perfect!

My sister Mindy and I were recently talking about this creamy sausage Rotel dip and it put me in the mood to make it. I forgot how good it was. It has been years since I had made it and then I made it 3 times this last month for different parties I attended or hosted. Everyone loved it! I realized that this recipe was not on the blog and needed to be! This is an easy recipe for me, since it is made from ingredients that I usually have on hand. I like to keep a couple of tubes of Jimmy Dean sausage in my freezer, and I almost always have cream cheese blocks in the fridge and cans of Rotel in my pantry. I can pretty much make this dip at the drop of a hat! Thankfully it literally takes no more than 10 minutes to make from start to finish. Perfect for game nights, movies or an easy snack for teenage boys that are over!

Creamy Sausage Rotel Dip Ingredients

  • 1 pound of ground sausage (like Jimmy Dean, mild or hot)
  • Rotel (canned diced tomatoes and green chilis)
  • 1 block of cream cheese

Small crockpot perfect for serving this dip at a party.

Description

Creamy Sausage Rotel Dip is a fabulous 3 ingredient appetizer that comes together fast and tastes incredible!


Ingredients

Scale
  • 1 pound of ground sausage (like Jimmy Dean, mild or hot)
  • Rotel (10oz) canned diced tomatoes and green chilis
  • 1 (8oz) block of cream cheese, cut into cubes

Instructions

  1. In a large skillet over medium high heat, cook the sausage until no longer pink. Breaking it up as it cooks.  
  2. Drain the meat when it is done cooking and return to the heat.
  3. Turn the heat down to medium and add the can of Rotel *undrained and the cubed cream cheese.
  4. Stir until cheese melts and serve with chips!  We like to eat it with Frito Scoops or tortilla chips. 

Notes

If you are not going to eat it right away, put it into a crockpot set to warm. This will keep it at the perfect temperature!  ENJOY!
