This is one of the original recipes I posted way back in 2009 and I thought it was time for some new pictures. These Chocolate Chip Oatmeal Bars are so good and so easy to make. They have become a favorite “go-to” treat for our family because they come together fast, are easy to double (if needed) and everyone LOVES them! Crispy buttery crust and an incredibly chewy gooey center with lots of melty chocolate chips. What’s not to love?!

I have had the BEST week! We welcomed our son Coleman home from a two year mission for our church. He served in the Missouri St Louis Mission, Spanish speaking. He loved his time serving but we sure missed him. My parents flew in from Utah to be here for his homecoming. It was so fun to be reunited with our sweet boy. He gave an address to our church congregation and then we invited all our friends and family over for an Open House.

One of the treats I prepped for the party were these Chocolate Chip Oatmeal Bars. It is such an easy recipe to double if you are feeding a crowd, So instead of baking them in a 9×13 pan, I baked the double batch in a cookie sheet (also called a half sheet pan 11×17). This recipe doubles great, but be sure to NOT overcook them. It is crucial to take out of the oven when they are just barely brown. Trust me! Don’t be tempted to bake them longer.

Description

Chocolate Chip Oatmeal Bars have a crispy buttery crust and an incredibly chewy gooey center with lots of melty chocolate chips. They come together fast, are easy to double for a crowd and everyone LOVES them!!

 


Ingredients

Scale
  • 1 3/4 cup flour
  • 3/4 tsp soda
  • 1/4 tsp salt
  • 1 cup oatmeal
  • 3/4 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 12 ounces chocolate chips

Instructions

  1. Preheat oven to 375. Whisk together dry ingredients and set aside. Beat butter, sugars, egg and vanilla till fluffy and add dry ingredients. Stir in chocolate chunks. Press into a greased 9×13 inch pan and bake for 18-20 minutes until light golden brown. 
  2. Pictured above is the recipe in a 9×13. I also love  baking these in a stoneware jelly roll pan (smaller than the common stainless steel cookie sheet). They are thinner and I only bake them for 15 minutes and they are so good. You could double it and bake them in a regular cookie sheet.
  3. Just remember to NOT overbake!!!  Remove from oven when they are barely brown!

    I’m hoping to make these delicious bars tomorrow for a baby shower- BUT I have one question- is it cooked oatmeal or oats? I have regular oats- do I cook or leave raw? thank you!

    Maybe I am missing something. The directions call for walnuts but the recipe itself has no mention and much less the amount. How much?

    Fabulous. I was looking for a treat to send with my son on a trip abroad and, since airline food is dismal or nonexistent, thought these would fill the bill. Big hit! I added toasted, salted walnuts (it brings out the flavor to toast them first) and dried cranberries. Next time I'll experiment using half whole wheat flour. Thanks!

    My mom has made these twice now and they are the END of me…I'm eating tomato soup and salads to save up the calories for these bad boys. Chopped walnuts, chocolate, oatmeal?? AUGH soooo good. I think she doubles the batch but smashes it all into one pan because they are HUGE. I LOVE IT!!!

    Melanie, These were so good and so easy! I just used half a pkg of choc chips, and they were perfect! I brought them to YW tonight and they were a hit. There were leftovers in the pan when I left but when I came home, they had been all eaten, so I think we can safely assume that Jed loved them too. 🙂 Thanks a bunch!

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience!
