Fabulous Flank Steak

For Father’s Day last month, I tried a new recipe for Flank Steak and it was FABULOUS!  I found this Alton Brown recipe and it was perfect!  So flavorful and delicious.  I am usually not a huge fan of steak (I know, I know, call me crazy:) but I have to admit that Flank steak is really good.  I love how it soaks up the marinade and the servings are thinly sliced and super tender.   A little goes a long way with this cut of meat.  You can’t help but love such a simple, easy and fantistic recipe like this!  Enjoy!  I served mine with Twice Baked Potatoes and Amazing Buttermilk Rolls.  Most of the work could be done a day or more ahead of time, making it a breeze to pull together the day of!

Ingredients

Scale
  • 1/2 cup olive oil
  • 1/3 cup soy sauce
  • 4 green onions, diced
  • 2 clove of garlic, minced
  • 1/4 cup lime juice
  • 1/2 tsp crushed red pepper
  • 1/2 tsp cumin
  • 3 TB brown sugar
  • Flank Steak

Instructions

  1. Combine the first 8 ingredients together in a blender and puree. Add the flank steak, seal, then refrigerate for 24 hours.
  2. Remove the flank steak from the refrigerator 20 minutes prior to cooking.
  3. Heat the out door grill or a grill pan on medium high heat and coat either grill with a quick brush of olive oil.
  4. Cook the flank steak for 3-4 minutes per side or until it’s cooked to your desired degree of doneness.
  5. Let the meat rest for 5 minutes before slicing in thin slices against the grain.
  6. Enjoy.

**TIP: I like to buy my flank steak at Costco which sells them in a two pack. I always make a double batch of marinade, and freeze the steaks in it. Then when I want to use them, they can defrost in the marniade.**

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
