Garlic Balsamic Crusted Pork Tenderloin

August 29, 2011 by Mel and Boys Kitchen + 27 Comments

I found this Garlic Balsamic Crusted Pork Tenderloin recipe while browsing Pinterest ( I LOVE that site) It sounded so good  and let me tell you,  it did not disappoint!    I am not a big meat eater myself, and I never crave it, but this recipe just might change that:)  This tenderloin was fantastic!   It was super tender and flavorful!  Just for fun,  I served it with some peach salsa, and it was

Have I mentioned that the HOT HUMID Southern Summers  are a trial for me?  Well, they are!  Man, just walking outside to get the mail, leaves you hot and sweaty and in need of refreshment like this cold Frozen Strawberry Lemonade!  One afternoon I was at the grocery store and saw this all natural 'Simply Lemonade' on sale and I thought of those yummy frozen lemonades that are sold at fairs and

BBQ Chicken Secret Spice Rub

July 8, 2011 by Mel and Boys Kitchen + 24 Comments

BBQ Chicken Secret Spice Rub

This BBQ Chicken Secret Spice Rub really gives an extra kick to bbq chicken!  It pairs wonderfully with the sweet and sticky glaze that forms from the barbecue sauce on the outside. It really is delicious and was a big hit at our 4th of July party!  For me, you just have to use chicken on the bone, with skin and all, when you grill barbecue chicken.  Boneless, skinless chicken breasts definitely

4th of July Strawberries

June 30, 2011 by Mel and Boys Kitchen + 171 Comments

Aren't these 4th of July Strawberries so cute?  The fourth of July is such a fun holiday with barbecues, family and friends, and lots of parties. So creating great food for it is a blast!  I love holiday themed food.  And apparently my two year old does, too.  He insisted on sitting practically on top of the plate while I took pictures of these little beauties.  As

Tres Leches Cupcakes

June 27, 2011 by Mel and Boys Kitchen + 34 Comments

When it comes to indulgent desserts, few can rival the divine decadence of Tres Leches Cupcakes. These miniature treats take inspiration from the classic Tres Leches cake, a beloved Latin American dessert, and transform it into a portable, bite-sized form that's perfect for any occasion. A Touch of Latin American Tradition Originating from Latin America, Tres Leches means "three milks" in

Vanilla Bean Buttermilk Cupcakes with Best Ever Vanilla Bean Frosting

June 23, 2011 by Mel and Boys Kitchen + 164 Comments

I know the title is a mouthful, but believe me... these cupcakes are divine.  The best ever vanilla cupcake you will ever eat.  (I actually made another version with sour cream the same day, and I liked this recipe way better).  And the frosting?  Don't even get me started.  Mel's Kitchen Cafe calls it magical, and I definitely think it is enchanted.  The frosting takes a little planning, but it

Layered Drinks

June 16, 2011 by Mel and Boys Kitchen + 162 Comments

There is only one word for layered drinks -- FUN! Kids are crazy about these, and every adult I've served layered drinks to has loved them, too.  Plus, you know me... I love easy, quick ways to make special occasions even more special.  I featured a red, white and blue drink for the Fourth of July, but these drinks are great for baby showers, birthday parties, summer barbecues... you name it!

Have you ever tried Ben and Jerry's Strawberry Ice Cream? It's one of the most popular recipes from the Ben and Jerry's Homemade Ice Cream recipe book. Mindy and I must be one the same wavelength this week, hooray for HOMEMADE ICE CREAM time! Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
