Blueberry Lemon Chia Seed Pudding

This Blueberry and Lemon Chia Seed Pudding is the perfect healthy and quick summertime breakfast or snack. You can easily make this the night before and it will be ready to go in the morning. I like to add some protein powder, which is not necessary but helps if you are trying to increase your protein. I have recently started weight training and so I am a little more cognizant of protein in my diet right now.

It’s kind of funny, but I really look forward to breakfast when I know this is sitting in the fridge. I like to top it with some vanilla greek yogurt, fresh blueberries and a sprinkle of granola (like this one–my favorite Simple Cinnamon Granola, which we always have in our pantry). This also makes a great little “treat” when you are trying to cut back on sugary sweets.

The bright and fresh flavors of blueberry and lemon are delicious and knowing how nutrient dense it is makes me feel like I am doing something really good for my body! See below for some awesome health benefits of these ingredients…

Blueberries: One of highest sources of antioxidants, boost heart health, brain function and numerous other aspects of your body. Bonus they taste GREAT!

Lemons: Rich source of vitamin C, aids in weight loss, helps to improve digestion, good for skin and nails.

Cinnamon: Shown to lower blood sugar levels, reduce heart disease risk factors and has a plethora of other impressive health benefits

Description

Made with a few simple ingredients this Blueberry Lemon Chia Seed Pudding is packed with nutrients, is easy to meal prep and tastes incredible!


Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup frozen blueberries
  • 1 cup unsweetened milk of choice (I like coconut, almond or cashew)
  • 1/2 lemon, juiced
  • 1/2 lemon, zest
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon (use less of leave out if want)
  • optional: 1 tbsp maple syrup, 1 scoop protein powder (I like coconut or vanilla flavored)

Instructions

  1. In a blender, combine blueberries, milk, maple syrup, vanilla extract, cinnamon, lemon juice/zest and  blend to combine.
  2. In a jar, add chia seeds. Pour blended mix on top.
  3. Stir to combine.
  4. Add protein powder (if using) and stir to combine.
  5. Place in the fridge for 20-30 minutes before mixing again.
  6. Leave in the fridge overnight.
  7. In the morning, top with a scoop of vanilla yogurt, fresh fruit and nuts or granola.
  8. Enjoy—yum!
