Ingredients

- 7 frozen shrimp
- 1/2 cup rice ( I like jasmine or brown rice)
- 1/2 cup arugula (optional –or just rice if you prefer)
- 1/4 cup pickled onions ( see recipe here)
- 1/4 cup shredded carrots
- 1/4 cup cucumber
- 1 tbsp fresh cilantro
- 1 tbsp fresh parsley
- 1 tbsp olive oil
- 1/2 tsp sea salt, pepper
Spicy Mayo:
- 1/4 cup mayo
- 1 1/2 tbsp sriracha
- 1/2 lemon, juiced
- 1 tsp honey
- 1/4 tsp sea salt
Instructions
- Saute your shrimp by adding olive oil to a pan to heat up. Add shrimp and top with salt and pepper. Cook until shrimp are fully cooked through.
- If using rice, prepare rice according to package directions *I like to use frozen brown or jasmine rice from Trader Joes–just heat the bag in the microwave!
- Make your spicy mayo by combining mayo, sriracha, honey, lemon and sea salt in a small bowl. Mix together to combine. Set aside.
- In a bowl, add rice, arugula (if using), carrots, cucumber, pickled onions and sauteed shrimp.
- Top with fresh herbs like cilantro and parsley.
- Drizzle with spicy mayo sauce.
