These Sausage Pancake Protein Muffins are fluffy, cheesy, packed with protein, and perfect for grab-and-go mornings.
Ingredients

3 large eggs

1 1/4 cups milk

2 tablespoons maple syrup

2 cups pancake mix (I use Kodiak cakes pancake mix for highe3r protien)

1 cup spinach, chopped (optional)

1 cup cooked sausage, chopped or sautéed

3/4 cup cheddar cheese, grated

1/4 teaspoon salt

1/2 teaspoon ground black pepper
Instructions

- Preheat oven to 375°F and grease or line a muffin tin.
- In a large bowl, whisk together eggs, milk, and maple syrup until well combined.
- Add the Kodiak pancake mix, salt, and pepper and stir just until combined.
- Fold in the spinach, sausage, and cheddar cheese.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes, or until set in the center and lightly golden on top.
- Let cool slightly before removing from the pan.
