Description

These Sausage Pancake Protein Muffins are fluffy, cheesy, packed with protein, and perfect for grab-and-go mornings.


Ingredients

  • 3 large eggs

  • 1 1/4 cups milk

  • 2 tablespoons maple syrup

  • 2 cups pancake mix (I use Kodiak cakes pancake mix for highe3r protien)

  • 1 cup spinach, chopped (optional)

  • 1 cup cooked sausage, chopped or sautéed

  • 3/4 cup cheddar cheese, grated

  • 1/4 teaspoon salt

 

  • 1/2 teaspoon ground black pepper


Instructions

    1. Preheat oven to 375°F and grease or line a muffin tin.
    2. In a large bowl, whisk together eggs, milk, and maple syrup until well combined.
    3. Add the Kodiak pancake mix, salt, and pepper and stir just until combined.
    4. Fold in the spinach, sausage, and cheddar cheese.
    5. Divide the batter evenly among the muffin cups, filling each about ¾ full.
    6. Bake for 18–22 minutes, or until set in the center and lightly golden on top.
    7. Let cool slightly before removing from the pan.
