Chili Relleno Egg Bake

February 3, 2021 by Mel and Boys Kitchen + Leave a Comment

Do you ever have breakfast for dinner?  You can call it 'Brinner' or just a very good idea and at my house we call it both! My boys think breakfast for dinner is the BEST and whenever I announce that is the plan, a cheer goes up!  I like to serve this cheesy Chili Relleno Egg Bake with fresh pico or some of my favorite winter salsa (using canned tomatoes and it is surprisingly really good)! I

Creamy Ranch Chicken over Rice

January 19, 2021 by Mel and Boys Kitchen + Leave a Comment

My cute daughter-in-law, Makinlee made this wonderful Creamy Ranch Chicken over Rice for our family and EVERYONE loved it!  The best part about this recipe she says, is how easy it is to make.  Simply place some chicken breasts or chicken thighs in a crockpot, sprinkle on a package of dry ranch dressing mix, a little pepper and a block of cream cheese. Let it cook during in the day and come home

This Cranberry Cake with Cream Sauce is the PERFECT Christmas dessert. Sweet, tangy cranberries in a buttery cake with a fabulous crispy top and topping it off with most wonderful cream sauce.  I plan to serve this on Christmas after our glazed ham and classic potatoes gratin dinner.   It will be perfect.  I can make the cake and cream sauce ahead of time making it a breeze to serve on the big

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
