Giant Ginger Spice Cookies

September 29, 2020 by Mel and Boys Kitchen + Leave a Comment

Have you ever had the Giant Ginger Spice Cookies from the popular New York City Bakery, City Cakes?  You know my love for the cookies at the famous New York City Levain Bakery (and my copy cat recipes), but I have not been to City Cakes bakery yet. You better believe I will when I make it to the Big Apple again when this darn pandemic is over! I can't wait! In the meantime, I will

Easy Skillet Meatballs and Marinara

September 22, 2020 by Mel and Boys Kitchen + Leave a Comment

Easy Skillet Meatballs and Marinara is the perfect recipe for family dinner on a busy weeknight.  It comes together fast and tastes delicious!  I like to double the meatballs and flash freeze half for next time.  I do this by placing the uncooked shaped meatballs  on a parchment lined cookie sheet and freezing them.  Once frozen I place them in a bag.  When you want to use them, simply allow more

My husband has always been a BIG fan of chicken teriyaki so I have tried lots of recipes over the years. Mushroom Cream Sauce

August 26, 2020 by Mel and Boys Kitchen + Leave a Comment

This Mushroom Cream Sauce that I loved served over Zoodles (spiraled zucchini) is incredibly delicious and is the PERFECT way to use the abundance of summer zucchini this time of year (in my humble opinion:).  My Momma and I whipped this up together while I was visiting Utah and my gluten free son Coleman was home that night to enjoy it with us.  Seriously, it was hit!  Although the next

This wonderful Rosemary Focaccia Bread is an easy to make, Italian Flat bread that is bursting with flavor and feeds a crowd.  It is made with a simple yeast dough and has a signature dimpled top that is perfect for holding olive oil, herbs and cheese that slowly soak in as it bakes.  This one is topped with fresh rosemary, flakey sea salt and parmesan cheese, which makes an incredibly

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
