Baked Creamy Chicken Taquitos

One of our family favorite dinners is Creamy Chicken Taquitos a recipe that my sister Brittany shared years ago.  Have you made them?  They are great--at least my boys sure love them!  I do too, but it has been very hard to make this recipe with corn tortillas (which are gluten free and one of my boys who has celiac disease cannot eat flour tortillas) because they crack and break so easily.  I now

How is August treating you?  We are 3 weeks into school here and getting into the groove of our new schedule.  There is a slight, coolness in the mornings here that hints of changes coming but by lunch time it is gone and the sun is blazing and hot!  Even though, I am very excited for Fall, I am trying too soak up and enjoy the last days of summer. One of my favorite parts of the summer season is

Healthy Zucchini Muffins

Here in Chattanooga, the kids are back in school and summer is over!  Well, I should say summer break is officially over, but summer is not.  Where I live in the South, the days are still very hot (and humid), the pool is still full of kids (after school now) and my garden is still producing lots of zucchini (thus these Healthy Zucchini Muffins)!  All sure signs that summer is still going

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
