Greek Quinoa with Avocados

March 14, 2013 by Mel and Boys Kitchen + 5 Comments

This Greek Quinoa with Avocados is such a great salad.  It is packed with nutrient rich ingredients and full of flavor.  Perfect for the sunny spring days we've been having this week!  Did you know that Quinoa is naturally high in protein?  It is a great as a vegetarian dish, but you could add some diced or shredded chicken to make a more hearty meal out of it.  This is the perfect side dish for

Thai Coconut Lime Soup

March 7, 2013 by Mel and Boys Kitchen + 45 Comments

This Thai Coconut Lime Soup is one of my new favorite soups.  It's so good!  I would say it is in my top five favorite soups ever.  My cousin's wife made it for a party several months ago, and it was love at first taste.  I can't stop making it now (nor do I want to stop).  There is some chopping involved -which is the bane of soups, but after the chopping is over, the soup comes together

Feta Dip

March 6, 2013 by Mel and Boys Kitchen + 18 Comments

I have a ridiculously easy and seriously delicious dip to share with you today.  I have made this dip several times now and it is always a big hit.  It comes together really fast with no cooking involved. Since the Feta cheese is the star here, make sure you get a good one.  I think the precrumbled kind can be dry.  I like the Presidents brand at Costco.  I buy it in bulk and cut it into squares

This White Chocolate Caramel Swirl Cheesecake is a post from my sister Brittany who makes the best cheesecakes!! Seriously! It's birthday time again for my sweet hubby, which means it's cheesecake-baking time!  This year I decided to try out a caramel swirl cheesecake. And then when I saw this recipe for White Chocolate Cheesecake, I thought, even better!  This cheesecake is extremely moist

Homemade Caramel Sauce

February 15, 2013 by Mel and Boys Kitchen + 22 Comments

I consider myself a die-hard chocolate lover.  I'm not too into caramel and will usually skip it.  Having said that, you better believe me when I say this homemade caramel sauce is beyond compare.  There is just something about it... there's no stopping at one bite, I'll tell you that.  It has the most unbelievable taste. Creamy, caramel flavor - not too sweet and syrupy like so many caramel

Heart Shaped Carrots for Valentine’s Day

February 12, 2013 by Mel and Boys Kitchen + 14 Comments

My husband totally teased me about these carrots.  He thought it was hilarious that I took the time to carve carrots into shapes and that my kids and I liked them so much.  If something happens to me, promise me you will check in on my husband and make sure my kids are eating veggies.  Because I know there are other crazy moms like me who not only love doing silly things like this for holidays,

Heart Shaped Cinnamon Rolls for Valentine’s Day

February 7, 2013 by Mel and Boys Kitchen + 8 Comments

We've been getting excited for Valentine's Day around my house.  And since we've been eating mostly really healthy since the New Year, my family was extra thrilled when they came home to heart shaped orange rolls one afternoon.  I cheated and used a can of pillsbury orange rolls from the store, but I think I might make the real thing Valentine's morning or for Family Home Evening next week.  Some

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
