Country Cake with Lemon Cream and Berries

April 25, 2008 by Mel and Boys Kitchen + 6 Comments

I had some friends over for a Ladies Luncheon to celebrate a birthday. (the chicken salad post was from the same day) It was very fun--I need to do it more often! This Country Cake with Lemon Cream and Berries was the dessert we had--it turned out very pretty and delicious! I used the cake recipe from my Barefoot Contessa 'Parties' cookbook. I also made Lemon Curd for the first time! I LOVED it! I

Garlic Caesar Salad Dressing

April 22, 2008 by Mel and Boys Kitchen + 9 Comments

This garlic caesar salad dressing is oh-so-good!! It is a mayo-free variation of the classic caesar dressing. My mother-in-law introduced it to me and now it's my husband's favorite salad (he has a strange aversion to mayo so this one is great!) Make sure to use lots and lots of parmesan cheese and some really good croutons. I like Costco's Foccacia croutons the best. I usually like to double it

Sundried Tomato Hummus

April 1, 2008 by Mel and Boys Kitchen + 7 Comments

For those of you that are not familiar with hummus--it is a Middle Eastern spread that uses chickpeas and tahini (sesame seed paste) as its base. This Sundried Tomato Hummus is so HEALTHY and really good!! I got the recipe from my sweet friend Karen. She is one of my cooking buddies and we share our favorite recipes in our monthly recipe group. Last month the theme was beans. (I brought a dish

Red Beans and Rice

Red Beans and Rice

This Red Beans and Rice recipe is bursting with flavor. Eric and I love the spicy kick it has! It is also a very forgiving recipe...once you get used to it, you can add or subtract ingredients that sound good or you have on hand. For instance, I used half an orange pepper, a red onion, and added a pound of chunked ham to it this time - it was delicious. The way it is written here it is spicy, but

Cardamom Granola

March 13, 2008 by Mel and Boys Kitchen + 8 Comments

This cardamom granola recipe is EXCELLENT!! I love it! I have tried different granola recipes and they have been too sweet, soggy or sticky...but this one is just perfect! It even stays crunchy in milk! I love that it has flax seed in it. (they are rich in Omega 3's --always a plus in your diet!) I also love the cardamon in it. I had never used it before (I actually bought the spice for this

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
