Caribbean Black Beans and Coconut Rice

June 5, 2008 by Mel and Boys Kitchen + 8 Comments

We had an Island theme for Melanie and Connor's birthday party last weekend and I thought  a dish like caribbean black beans and coconut rice sounded really good to serve alongside the Kaula Pork. I looked for a recipe but couldn't find one that sounded perfect so I improvised...and this is what I came up with. It turned out delicious! The peppers came from Costco in that bag of red, orange and

Coconut Ice Cream

June 2, 2008 by Mel and Boys Kitchen + 11 Comments

This Coconut Ice Cream is a coconut lover's dream! It is creamy with a rich coconut flavor.  I prefer the coconut toasted and sprinkled on top, but I really like it mixed into the ice cream, too.  A fun variation is to add 1/2 cup of chopped macadamia nuts for a little crunch and a tropical feel!  You will think you are in Hawaii with just one bite!  This ice cream is wonderful over brownies too!

Shrimp Enchiladas

May 27, 2008 by Mel and Boys Kitchen + 7 Comments

These Shrimp Enchiladas are so yummy. I would have never expected shrimp and enchiladas to be such a good combination. In fact, I wouldn't have ever made these except that my sister-in-law, Melanie, posted this on her blog My Kitchen Cafe. And since I trust Melanie's taste so much, I gave it a shot. It was very good!! I've made these a few times since then. One tip - you might as well buy the

Thai Chicken Peanut Noodles

May 20, 2008 by Mel and Boys Kitchen + 14 Comments

My sister Brittany made me these amazing Thai Chicken Peanut Noodles and I LOVED them. I have been making them ever since. It is an easy quick recipe that tastes fantastic and everyone enjoys! When this dish is fresh and warm, the sauce has a tendency to pool at the bottom, so serve it in a shallow dish and scoop deep when serving. Every ingredient is important--if you don't have fresh ginger,

I had some friends over for a Ladies Luncheon to celebrate a birthday. (the chicken salad post was from the same day) It was very fun--I need to do it more often! This Country Cake with Lemon Cream and Berries was the dessert we had--it turned out very pretty and delicious! I used the cake recipe from my Barefoot Contessa 'Parties' cookbook. I also made Lemon Curd for the first time! I LOVED it! I

Garlic Caesar Salad Dressing

April 22, 2008 by Mel and Boys Kitchen + 9 Comments

This garlic caesar salad dressing is oh-so-good!! It is a mayo-free variation of the classic caesar dressing. My mother-in-law introduced it to me and now it's my husband's favorite salad (he has a strange aversion to mayo so this one is great!) Make sure to use lots and lots of parmesan cheese and some really good croutons. I like Costco's Foccacia croutons the best. I usually like to double it

Tribute to my sweet Mom

I developed my love of cooking at an early age “helping” my Mom bake cookies, make dinner, and knead bread. She had quite the well of patience! She is the one that taught me about measurements, leavening agents, egg-washes, the basic white sauce, and numerous other mysteries of the kitchen!  I cherish the memories I have of learning to cook at her side. Thank you Mom! You instilled in me a respect for work as well as a joy in creating delicious things. I love you! xoxo
